Bayou Reserve 40°: Description and customer reviews

Bayou Reserve is an American rum from Lacassine, Louisiana. The local molasses comes from the cane of the Mississippi Delta. It is produced by the country's oldest independent sugar mill.

Fermentation is ris carried out with yeast from the cane, and the rum is distilled in copper pot-stills.

Aged for 3 years in old bourbon barrels.

Nico's tasting notes

On the nose, we discover a gourmand woodiness with tender fibers, like a full-bodied blond tobacco scented with vanilla. Sugar cane, or rather sugar cane syrup, expresses roundly vegetal notes that promise to be truly delicious.

Aeration in no way detracts from the greediness, and the soft wood is joined by spices as sweet as they are bold, freshly ground. Cinnamon, vanilla and tonka bean join an oaky, pastry-like nuance of marzipan.

On the palate, you'll savor all the deliciousness of full-bodied, well-melted American oak, with hints of nuts. We can even imagine pecans or almonds caramelized with fleur de sel. Vanilla and soft woods offer a most seductive brioche sensation, followed again by surprising notes of candied cane.

The finish is deliciously spicy and tender like cake batter.
