Cubaney Centenario is an ultra-premium rum over 25 years old, made by Oliver & Oliver.

This Dominican Republic distillery, well known to ron aficionados, practices solera. This is a method of aging spirits inherited from Andalusia and used for sherry. It involves blending aged rums with younger rums, so that the latter can benefit from the aromatic palette and roundness of the former.

This is Cubaney's top-of-the-range rum.

Each bottle is numbered and signed by Maestro Ronero. The year of bottling is indicated on the back label.

Nico's tasting notes

The nose of this rum is very round and seductive. Its light heart is richly enveloped in vanilla, caramel and a fat, cigar-leaf-like woodiness. The fruity, tangy notes are followed by sweet spices such as nutmeg, cinnamon and even sweet pepper.

Aeration removes the rounder, sweeter notes, refocusing on a lovely concentration of American oak. The vanilla is more serious, more vibrant, all the more so as it is joined by toasted coconut flesh. Some toasty oak notes smoke above the glass, with a pinch of pepper.

The attack on the palate is balanced, and much less sweet than the nose might suggest. It's no less round and pleasant, on the contrary. American oak still leads the way, but here it's more roasted. Vanilla and caramelized nuts lead the way to more sweetness, accompanied by a little orange liqueur.

The finish is soft and light, with aromas of caramel and maple syrup.
