English Harbour Sherry Finish is a limited edition. This is the 5 year old (aged in bourbon casks) which has been further matured in Oloroso sherry casks for 2 months.
Each batch is numbered, as is each bottle.
The rum is not cold-filtered before bottling, to preserve all its aromas.
Nico's tasting notes
On the nose, it's the influence of American oak that first comes to the fore. Mild, discreet tobacco appears, followed by caramelized vanilla and soft oak. Nuts start out white and round, then become more full-bodied and roasted. Then it becomes clear that the sherry cask is beginning to take over.
Aeration allows the rum to develop its charm considerably. Smooth but not necessarily too round, it offers a warm side, with a palette of well-melted and integrated aromas. All the notes seen on the first nose are well blended and amalgamated, and a set of stone fruits in brandy has been invited in. You really want to dip your lips in it.
On the palate, there's something rustic and almost farmhouse about this rum. Its aromas of straw and wet wood quickly give way to a whiff of spice and toast, then a mellow charm of vanilla and toasted coconut.
The finish is long and tasty, like a good gingerbread with candied oranges.
