Macollo Ron Black Label 12 ans is a pure cane juice Mexican rum.
It was aged in oak barrels for 12 years in cellars located in a mountainous region. By maintaining a constant temperature of 15°, these cellars reduce the angels' share.

What a nose for a rum of this degree and origin! Its rich, enveloping aromatic palette is surprising from the outset, and lies somewhere between pure cachaça-style rum and the English-style rum typically distilled in pot-stills. In plain English, this translates into gently vegetal and spicy notes, with a golden straw dotted with curry and anise, followed by ripe exotic fruits and marzipan. It also has the advantage of not picking up the slightly metallic notes usually associated with this style, thus preserving the sweetness.
Aeration enriches the profile with a more woody side that unfurls honey, caramel and vanilla, without overshadowing the rum's fruity, aromatic soul. The nose is generous and complex, with no unpleasant notes, and all in delicacy. The anise has matured into licorice and the fruit is bursting with sticky juices. The pastry register is expressed with the soft pedal, just right.
On the palate, after a few gentle notes of toast, the rum begins to develop gourmand, spicy notes of tonka bean and cinnamon. Its sweet, honeyed cane mingles effortlessly with the flow of aromas, adding texture. The fruit is very ripe, but not fermented or exuberant, but rather wise and weathered, slightly brioche-like.
On the finish, the cane seems more fermented. Its cut-grass character sometimes flirts with asparagus or even olive.
