Père Labat 59° is a white agricultural rum from Marie-Galante. It's a great classic. This rum is made from pure sugarcane juice, giving it a rich palette of aromas. Production of this product is very limited.

Nico's tasting notes

The nose of this white rum is authentic and uncompromising. It may seem rough and very dry at first, and needs a little air. The terroir really shines through here, with an earthy, even dusty quality, followed by notes of bagasse and straw. The fermentation notes take us towards a vegetal, almost vegetable side, reminiscent of kale. This rum has captured the heart of the cane fibers, which seem to contain a peppery juice. We think back for a moment to the sweet yet powerful aroma of cabbage chop, before the rum opens up to citrus.
It's this slightly more acidic side that develops with aeration. The character of Père Labat rums is there in all its splendor, the cane explodes with vivacity and, ultimately, incredible veracity. The more this cane asserts itself, the prettier you think it is.

The palate is very round on entry, with a straightforward, very peppery cane. The dryness embodied by the bagasse also emerges after this soft, consistent attack. Fermentation notes are more discreet, with a hint of black olives.

The rum fades into the background without overpowering the palate, leaving the cane to be tasted from every angle.
