Privateer Navy Yard Single Cask P526 54,6 : Description and customer reviews

Privateer Navy Yard is a rum from the United States, and more specifically from the town of Ipswich in Massachusetts. It takes its name, not from the "navy" style, but from the American shipyard that houses the oldest warship still afloat, where the famous Privateers operated.

This is a rum made from sugarcane molasses (from a single farm in Guatemala) fermented for 6 days. Distillation takes place in pot-stills, followed by column distillation. Aging takes place in new American oak barrels, to which "alligator" toasting has been applied. This is the highest level of toasting, charring the surface of the barrel and producing highly toasted, caramelized notes.

After a minimum of 2 years maturation in cask, Navy Yard is bottled unreduced, cask by cask, making it a brut de fût single cask.

Nico's tasting notes

The nose is fresh and ethereal, with a profile strongly influenced by bourbon. Caramelized cereals and vanilla are reminiscent of American oak. Roasted nuts reinforce the rum's presence, while the woody veil lends it a more prominent presence.

With a little aeration, the young white rum of the early days comes through in the form of velvety mango. A few light notes of sweet flowers still hover above the glass. The oak comes back to settle gently, now rounder, softer and greedier.

The palate offers an enveloping, savory concentration. The rum here seems more mature, with elegant, exotic spices. The oak is as tender and gourmand as on the nose, detailing notes of vanilla, tobacco, buttered cereals and toasted coconut, all in a mellow finish.

The finish continues along this greedy, almost brioche-like path. Then the wood releases its final smoky, toasty notes, sometimes reminiscent of maple syrup.
