This rum from the Savanna distillery in Reunion is a Grand Arôme rum, i.e. a white rum that has undergone a very long fermentation process lasting over a week (as opposed to the usual 1 to 3 days). This is a very delicate operation that few distilleries know how to master, and which results in a rum extremely rich in "non-alcoholic elements", i.e. aromas.

Summary: olives - very ripe fruit - creamy - pastry-like

On the nose, we have a rather radical profile of green and black olives in brine. This nose quickly opens up to floral notes that immediately broaden the horizon, revealing extreme aromatic amplitude. All families of aromas are represented, from spices to flowers, a tour de force for a white rum. The cane and bagasse are fermented, candied, and enhanced by pepper and salt-preserved lemon. The salty aspect is balanced by a pleasant roundness and mellowness.
Aeration continues to reveal a wide variety of aromas: leather, brine, a hint of vegetable. Pepper is increasingly pronounced, present at every moment. The fruit is more than past, it's also candied to evoke a raisin cake. The more the rum airs out, the easier, more gourmand and richer it becomes.

The attack on the palate is soft and bewitching, with a creamy texture. All the exoticism emerges and unfolds, with very ripe fruit and the rich humus of a tropical forest. The olives keep up the intensity, even supported by anchovies. Yet the rum remains soft, never burning or pungent.

The interminable finish features ripe fruit and olives in brine.

    One drop of this rum perfumes my entire bar. Discovered on Reunion Island, it's my favorite. For a more exotic tasting, it goes wonderfully well with real pineapple syrup.

    A rum with a unique profile. Very powerful despite its 40 degrees. A touch of Jamaican dunder, but less fruity and more asphalt-tarred. An ester monster for lovers of the genre.
