Novo Fogo Chameleon is a cachaça, the pure cane juice rum whose production is strictly limited to Brazil.
The Novo Fogo distillery is located in Pico do Marumbi, in the heart of the rainforest and at the foot of the Serra do Mar coastal mountains. Their entire range is certified organic, with the utmost respect for the environment.
The sugar canes are harvested by hand and pressed within hours. The vesou is distilled in a copper still, while only the heart of the distillate is kept. After a long rest in vats, the cachaça spends a year in ex-bourbon American oak barrels. These are second-hand casks that have been disassembled, sanded and re-toasted.
Bottling is carried out without cold filtration.
