Nico's tasting notes
On the nose, it's a rather wild rum, with an energy that's already devastating. The long-fermented molasses is there in its natural state, with nuances of mushroom, dried meat, leather and a good dose of olive in brine.
With aeration, the wine gains in vivacity and freshness. Iodized olives in brine are surrounded by resinous aromatics like rosemary, then pepper berries and even a hint of juniper bitterness.
The palate is surprisingly round, with a blend of solvent, white flowers and crushed red fruit. There's a pleasing contrast between the acidity of certain red and black fruits, and the almost creamy texture of the rum. The mid-palate reveals a more tropical profile, with very ripe exotic fruits and a hint of iodine.
On the finish, the iodized touch turns to brine, and we discover a handful of green olives accompanied by mashed bananas.
