Ypioca Paille Reserva Castanheira is a cachaça, the Brazilian cousin of rhum agricole. Distilled from pure cane juice, it has the particularity of being very smooth, thanks to its artisanal production method and its low 38% alcohol content.
Here we have a blend of cachaças that have spent a short time in chestnut barrels. They have thus acquired roundness and slightly spicy aromas. The bottle is covered with hand-woven Carnauba straw (a species of palm from northern Brazil).
Nico's tasting notes
The nose opens with candied cane and hints of English candy. Balance is the order of the day, with fresh vegetal notes balanced by a certain roundness and a relatively light final character.
Aeration caramelizes our cane juice, transforming it into candy sugar. Memories of fermented vesuvius then resurface, with hints of resinous aromatics, green pepper and a touch of lemon.
The palate is light and fluid, and the cane juice is completely pure, stripped of its fermentation notes. Spices and a slightly metallic edge tickle the taste buds in the mid-palate, with a light, fresh alcohol that makes the cachaça evaporate on the tongue.
The finish returns to something a little more aromatic and peppery.
