Tasting notes from Thomas
The nose echoes the great bourbon themes. Varnished wood, vanilla ice cream and shredded coconut are all present. However, poppy and dehydrated fruit (apple, banana) seem to be deposited on a noble wood plank. The nose is lively and expressive, drifting gradually towards toasted bread, cinnamon and eucalyptus.
Aeration adds a few cereal notes. The dilution is not revolutionary, but makes the whole more homogeneous. Oranges, milk cream, chocolate and flowers (lilac) come through.
The texture, on the palate, is fluid with an obvious liveliness. The fruit has mutated and now seems centered on raspberry wafers, oranges and dehydrated banana. However, the classic notes are still there: vanilla ice cream, cinnamon and varnished wood. The second part of the palate is more vegetal, with cut grass and eucalyptus. Raspberry and graphite return to the fore.
The dilution makes it even more approachable, with a perfectly integrated fruity component. In addition, a few flowers (rose, lilac) seem to be incorporated into the profile.
The finish is opulent and rich. Slightly drier, driven by its woody impulses, it is enriched with vanilla, coconut and raspberry. Finally, graphite, fruit and spices fade into a vegetal atmosphere (cut grass, eucalyptus). The addition of water reinforces the impact of raspberry and coconut, while preserving the woody patina. Flowers also appear (rose, geranium).

On the nose 👃🏻: this is a very spicy juice, delivering a predominant note of hazelnut with a good dose of cinnamon too, followed by vanilla and clove to a lesser extent. It offers a fine concentration of flavors. The old oak is quite pronounced, gaining in deliciousness as the minutes go by, becoming more caramelized and with toasty notes.
On the palate 👅 it's very round, suave and concentrated here too. There's hazelnut in the foreground with strongly boused oak, very intense. Cinnamon and clove spices develop on the mid-palate, with ginger adding spice and freshness. The barrel's bousinage is truly predominant, delivering a very charred aspect with roasted hazelnuts, reminiscent of leather.
The finish is long, with lighter notes. The oak is a little more neutral, accompanied by caramel and vanilla. The spices soften, with a note of rye that keeps the mouth alert 👌
Verdict ⚡️: despite being a brut de fût, this bourbon is not overly aggressive. The spices express themselves well alongside the heavily toasted oak, but the intensity remains moderate. This is a good point for those who have difficulty with BDFs at very high degrees. There's a nice concentration of flavors with typical Jim Beam notes 🤠
