Bologna Dark Sail is a blend of aged rums between 3 and 6 years old.
The name and label refer to Jean-Antoine Amé-Noel, who acquired the Bologne estate in 1830.
Legend has it that this sinner once discovered treasure in his black-sailed vessel. It was this treasure that enabled him to acquire Bologna.
Nico's tasting notes
The nose opens with a rather light agricultural rum, with gourmet accents. The vesou is peppery and lemony, with a round, sweet edge. The wood seems fresh, the raw white oak fiber soaked in cane juice.
Aeration brings out fairly sweet fruit, with rich, still abundant juice. This fruitiness evolves into something stewed, then jammy, with a generous rasp of spice. Lightness remains the order of the day, with a very fluid rum expected on the palate.
The palate is greedy and woody, with oily nuts and dark chocolate. The fruits are still soft and restrained, though their flavors remain prominent. The cane continues to be accompanied by its trusty lime, and binds with a few dried fruits.
The finish is light and the alcohol gently tingles on the taste buds.
