This Bologne Extra Old is distilled in copper column stills, then aged in French oak barrels. Bologne XO is a blend of rums aged 6, 8, 10 and over 10 years.
Nico's tasting notes
The nose of this rum opens with notes of ripe exotic fruit and cane. It's immediately generous and radiant. The fruitiness is of the deep kind, not freshness but maturity. The same can be said of the cane, which is as if candied, its juice thick and amber. The toasty woodiness is refined, finely spiced, with a few tobacco notes reminiscent of a cigar box. One imagines that the rum will be as thick as sap, all the more so as there's a slightly industrial, metallic side to it, which could also bring to mind motor oil mixed with quince paste (!). These notes bring a "serious" character to the whole, making the rum more interesting in that it breaks with stereotypes.
The quince paste is confirmed with aeration. Apricot and peach jam are sticky, the nose thick and mellow. The balance now comes from the black olive, which adds bite and texture. It's a complex but unified rum, with everything well integrated, and the alcohol really extremely discreet. Before bringing the glass to the palate, there's a slight winey, slightly oxidized touch of walnut.
The palate is a delight, just as the nose suggested. Prune, apricot, very round cane and thick amber resin. The texture shows mellow tannins, mixed with dried exotic fruits. The juice of a licorice stick adds a green, herbaceous edge. Honey and candied fruit are comforting and well done. To sum it up in technical language: it's really good! Vanilla completes the balance with its sweet, woody flavor.
The finish slowly melts licorice and tannins. They are candied, with a little stone brandy and vanilla sweetness.

We find the woody taste of XO like a cognac. But quite bland in the mouth and rather centered on the alcohol. I prefer the Old black cane at ~ 60E more expressive and perfumed.
