Like the Reserva Especial, this finish from Cañero, the Dominican Republic's rum brand, was initially aged for 12 years using the solera method (a technique that involves combining old rums with younger ones and aging the whole).
Instead of stopping there, the rum was placed in barrels that had contained sherry cream. This variety of Sherry is the sweetest: a blend of oloroso, pedro ximenez and moscatel.
Nico's tasting notes
The nose is both mellow and floral, with what we imagine to be sweet caramel, and a slightly dry but heady pot pourri. Sweetness seems to be the order of the day, while we catch a glimpse of meringue or even marshmallow. The few fatty white nuts are coated in cane syrup, for a sort of light frangipane. With time, a creamy side takes hold, and a quick turn of the glass reveals the tannic notes of the sherry cask.
The palate is balanced, though quite round. The rum is rather rich, with prune, red fruit and some black fruit tannins. The texture is fat and sweet. The heart of the rum is vanilla and tenderly woody.
The finish is sweet and fragrant with luscious red fruits.
