Chalong Bay Infuse Kaffir Lime is an infused agricultural rum. It is distilled in the Phuket region using an astonishing process: during the distillation process, the alcohol vapors become impregnated with the fruit (in this case combava, another name for "Kaffir Lime") contained in a special compartment at the top of the still, before condensation.

Combava is a fruit that resembles a lime in appearance, with an intense aroma reminiscent of lemongrass. It originally comes from an island east of Bali called Sumbawa, from which it takes its name. The plants used to make this infused rum are grown exclusively in the vicinity of the distillery.

You can use Chalong Bay Infuse Kaffir Lime as a base for cocktails, or drink it neat.

Nico's tasting notes

In brief: cane - citrus - violet - lychee

The nose opens with a lovely, sweet, slightly peppery cane eau-de-vie. The citrus fruits are soft and mellow, arriving quietly with a few grains of brown sugar.
Aeration allows the citrus fruits to develop to their full potential. They are then highly perfumed, with hints of violet, pineapple and, above all, lychee. The cane and sugar are still there, still very soft and silky, like a marron glacé.

The attack on the palate is rather intense, like a rice or lychee alcohol tinged with violets. It's a very Asian profile, especially as the citrus fruit now takes the form of a lemongrass stick. The sensation is fresh and fruity, like fruit water in syrup.

The finish is a delightful reminder of the lovely cane eau-de-vie, and the pleasure is prolonged with flavours of lychee.
