In brief: wood - sweet spices - medicinal - round - vegetal
On the nose, this young amber rum already offers an interesting expression. The woodiness is rather subtle, oscillating between soft notes of vanilla and encaustic. The amplitude between these two aromas (one rather mildly spicy and pastry-like, the other more medicinal) offers a host of nuances that will see the rum pass through fruit (apple/pear), cane sugar syrup, or even flowers.
Time and rest show rum's mellow side. As fruity as ever, it is sometimes reminiscent of a tarte normande boosted with calvados. Herbal spices, herbaceousness and green woodiness provide the medicinal side. Alongside the floral cane, there's also a more classic base of vanilla and light caramel.
The palate is extremely soft and light in texture. We pass close to the alembic, with well coppered, slightly sulphurous notes, then approach the wood of the cask and its fat, white nuts. As on the nose, vanilla mingles with medicinal hints of resin and pine needles. This combination seems to be the hallmark of this rum. The herbaceous, spicy vegetal side could be compared to cachaça, with the sweetness of candied herbs.
The finish is lightly woody, lingering on delicate, finely spiced cane juice.
