Christian Drouin XO Calvados is a blend of several cuvées aged in small barrels, all distilled twice after long fermentation.

The nose concentrates aromas of baked apples. Enriched with butter, they seem to melt in the mouth. However, peripheral notes appear: almonds, leather, apricot jam and pear wedges. Mild spices (white pepper, cumin), encaustic and a milky aspect arrive later.
The texture, on the palate, is silky and the character is clearly assertive. Baked apples are still present, but are accompanied by a drier profile. Spices (cinnamon, cumin) and encaustic meet powdered almonds with a woody touch (apple seeds). After the sweetness, there's a reversal of style, hinting at complexity.
The finish is medium-bodied and mellow, carrying the tenderness of apples. Spices and wood come to the fore without excessive violence. There's even a hint of bitter freshness (cardamom, licorice).
