The amber rum produced by the Clément distillery is a wonderful introduction to tasting vintages aged in wood. Having spent twelve months in oak barrels, this amber rum has absorbed the aromas of both the wood and the sunny terroir of Martinique.

Nico's tasting notes
Vanilla immediately leaps onto the nose, as if eager to emerge from the glass after all that time spent in the barrel and then in the bottle. A citrus-tinged white agricultural rum takes over, with notes of grapefruit that are simultaneously sweet, bitter, and tangy. The vegetal side of the rum then expresses itself, in a very candied style, where the bagasse and straw have cooked and melted well. The pepper remains in the background, and the rum then begins to open up with creamy red fruits.
Aeration reveals another layer of licorice and vanilla. The vegetal and citrus notes combine to evoke the young white rum of the early days. The pepper now blossoms, reinforcing the agricultural identity of this amber rum, which settles down and falls a little more into line. There are a few hints of fermentation, followed by a less candied vegetal note that has lost the sweetness of the initial nose, resulting in a more straightforward character.
On the palate, it is a light rum, very vegetal however, with strong flavors of wood, not toasted wood but rather exotic wood essences that release aromas of curry. The peppery note has not lost its intensity, it continues to express itself on the palate by bringing with it the zest of lime, which will inevitably evoke a good ready-made ti'punch. The agricultural identity then reasserts itself constantly, with the fiber of the cane and its straw, as well as a herbaceous and fresh feeling like cut grass.
The finish is quite smooth, with a relatively mild alcohol content. The honey and pepper flavors fade gently.
