Clément Vieux Secrets de fûts Boisé is the brainchild of former Clément cellar master Robert Peronet. He is a master at selecting casks and understanding the different profiles they can bring to rum.
For this cuvée, he has chosen French oak barrels that have benefited from long, gentle toasting. This allows for the expression of pronounced yet delicate woody aromas. What's more, to achieve this toasting, a few staves from old barrels were added to the fire, for an inimitable signature.
This column-distilled agricultural rum from Martinique has been aged for at least 3 years in these specially prepared casks.
Nico's tasting notes
On the nose, a lovely spicy, woody bouquet unfurls and warmly envelops us. Thick wisps of cigar are followed by arrows of cane and fresh wood. The tannins are sufficiently mellow, but retain the green edge of their youth.
Aeration brings out the tannins a little more, which are as mellow as ever, displaying more and more dried fruits such as apricot and pineapple. With a little rest, the whole is sprinkled with cinnamon, for a very pleasant balance.
On the palate, we find our woodiness, which now takes on hints of lightly roasted, caramelized nuts. The cane quickly brings its peppery relief and typically agricultural freshness, then melts into an ensemble of spiced nuts.
The finish is sweet and slightly caramelized, with a lime-peel cane juice that holds the taste buds for a long time.
