Clément Vieux Secrets de fûts Gourmand is an agricultural rum bottled by Martinique's famous Clément house. Robert Peronet, the former cellar master, designed this series of special cuvées. For this cuvée of "gourmand" rum, American oak casks and French oak barrels were bathed in water. The aim is to soak the wood and extract as many aromatic compounds as possible, without the oak taste predominating.
After a minimum of 3 years' ageing, the result is a rum with little woodiness. It gives way to the rum itself, as well as to the spice and fruit aromas contained in the wood.
Nico's tasting notes
The nose is divided between light, fruity rhum agricole and a good deal of spice. The cane is both ripe and fresh, that is, its aromas are well candied, but it retains both its vegetal and herbaceous side.
Aeration brings us a little more woodiness, with oak that's both elegant and gourmand, sprinkled with precious spices. The cane is also more gourmand than ever, nourished by these spices that give it a classy patina.
On the palate, a certain acidity brings lightness and vivacity. It's supported by a handful of tannins, providing a little astringency on the attack. The cane juice then takes the form of a light, fluid caramel, underlined by pepper.
The finish is soft and light, with the rum gently fading away.
