Clément VO 3 ans is a blend of rums aged in new oak and bourbon barrels.
Nico's tasting notes
On the nose, this agricultural rum is still quite young and, above all, fresh. The slightly dried fruits have retained their freshness, mingling with the sap of freshly cut wood. As if in a sawmill, one imagines the light shavings flying out and perfuming the room.
With a little air, the wood brings out its tannins, which take on a grainy appearance. The rum's texture becomes thicker, with a greedy, nutty paste scented with dried fruits such as mango, apricot and papaya. A certain maturity has definitely set in.
On the palate, this is a lively rhum agricole. It oscillates between the fatness of mellow tannins that are close to peanut, and the lively, peppery bagasse of sugarcane. On taste buds still numbed by spices, an elegant woodiness draws its freshly discovered veins.
The finish leaves a little room for cane and its trusty lime zest.

On the nose 👃🏻: the profile is immediately very agricultural, with the cane juice still young, quite dry and above all peppery on the first nose. The rum has begun to extract the still-fresh tannins from the oak of the new barrels, bringing an almost oily side, nutmeg and clove. There's little sweetness or vanilla notes here. Nuts become more pronounced in the glass with aeration.
On the palate 👅: I immediately find nutmeg and clove on the attack with a certain roundness. It's nicely spicy, the rather powerful pepper lands right behind, a true agricole impossible to go wrong! It's very reminiscent of an aromatic white rum, but the young dry wood perfumes the whole with a freshness reminiscent of its ageing. It also delivers a few roasted notes on subsequent sips.
The finish holds quite well on the palate thanks to this rather lively amount of spice. It tingles nicely despite the small 40%, especially with the pepper and nutmeg putting up resistance 👌
White rum / aged rum... there's a fine line between the two with this Clément VO. And that's hardly a reproach when you consider how pleasant some white rums are to taste dry and aromatic. This bottle will delight fans of AOC rhum agricole 😉

We use this rum to make ti-punch, which is much better than white rum and less of a headache, and we find it fragrant and very delicate.
