Yoann's tasting notes
On the nose, we recognize the agricultural rum with its freshness, its finesse, and its cane juice side (although discreet). The fruits take the lead with freshness and exoticism. More spicy notes come to mark this nose with a spicy side like black pepper. The whole is coated with almost toasted woody notes.
On the palate , the juicy exotic fruits confirm their presence with this freshness. The spices are much more tame than on the nose. Over time, they become more and more persistent, as does the woodiness. The aeration allows the rum to open up and emphasize the woody or even toasted notes brought by the barrel with a certain elegance.
The finish highlights this frank woodiness and a basket of very pleasant sweet spices.
