Depaz Blanc Cuvée Alizés 45°: Description and customer reviews

Depaz Blanc Cuvée Alizés is a white agricultural rum bearing the AOC Martinique label. The distilled juice is made from 3 varieties of cane. These are B59.92 (reed cane), B69 (blue cane) and R579 (red cane).

These canes are harvested on the volcanic terroir of Montagne Pelée, where the trade winds blow from February to April. It is these special, exceptional conditions that give this rum its distinctive aromas.

The reduction method is also unique. For more than 4 months, phases of gradual dilution and rest follow one another, allowing the rum to develop its full richness, and in particular its length on the palate.

Nico's tasting notes

The nose is packed with citrus and ripe cane, offering a gourmet balance from the very first moments. The fruit rind is fresh, but also oily and powerful, which contrasts with the roundness of the sweet, tender cane juice.

Aeration allows us to explore the cane juice from every angle, rediscovering its gourmet mellowness, then plunging deeper into its fermentation. A few iodized scents reach us, along with green olives and steamed vegetables.

On the palate, the same profile emerges, with greedy, oily citrus fruit, and a cane that gains in vivacity thanks to a good pinch of pepper. The cane juice is green and sweet, bursting with aromatics and menthol, with a candied lemon whose mellow texture occupies the palate well.

The finish is round and softly peppery, slightly aniseed, with rich, juicy cane fiber.
