Depaz Doré is slowly impregnated with its characteristic color and aromas in oak tuns. This cuvée has benefited from at least a year's maturation to acquire suppleness and complexity.
Nico's tasting notes
The nose is spicy, woody and fresh, with pepper tickling the nostrils from the outset. This is a true Martinique rum with character. The woodiness is even slightly blown, we're dealing with a tough nut to crack. However, it soon becomes clear that this is no more than an artifice to mask its tender heart. The milk chocolate quickly spreads, milky and even creamy. The aromas are even brioche-like, set against a moist woodiness.
As the rum swirls in the glass, the puffiness of the cask once again comes to the fore. It gives way to a soft, wet woodiness that releases notes of incense and bark. It's clear that this nose is singularly gourmand.
The attack on the palate is round, almost honeyed. The cane is mellow, less expressive than the fruit basket, which is soon sprinkled with chocolate.
The finish gives way to straw and cane fiber, the woodiness is there but remains in the background.
