Produced in a very limited edition, Don Papa Sherry Cask, in addition to the usual 7-year aging in ex-bourbon casks, has spent 18 months in casks that have previously contained sherry, and more precisely 4 types of sherry: fino (dry wine), palo cortado (rare), cream (sweet) and pedro ximénez (very sweet).

Nico's tasting notes
The nose is rather balanced, with molasses, strongly roasted nuts, camphor and red fruits. Tangerine brings its bitterness and acidity, making for a rather lively finish. Over time, camphor and wax take on an increasingly medicinal quality. With time, the varnished wood comes to the fore. It is soft and warm, exhaling aromas of vanilla tobacco and nuts.
The palate is dry and astringent, as the sherry cask would suggest. Once again, camphor takes a large slice of the aroma cake. The profile is frankly medicinal, resinous and a little roasted. The blend is quite concentrated, with intense vanilla, ripe exotic fruit and resin, followed by a hint of cereal.
The finish is quite long and greedy, with exotic fruit and cherry pit, as well as a brioche-like character.
