Produced in a very limited edition, Don Papa Sherry Cask, in addition to the usual ageing of 7 years in ex-bourbon casks, has undergone an 18-month passage in casks that have previously contained sherry, and more precisely 4 types of sherry: fino for one (dry wine), palo cortado (rare), cream (sweet) and finally pedro ximénez (very sweet)
Due to the rarity of this bottle, only 1 unit is available per customer. Thank you for your understanding.
Nico's tasting notes
The nose is rather balanced, between molasses, strongly roasted nuts, camphor and red fruits. The tangerine brings its bitterness and acidity, which makes for a rather lively finish. Camphor and wax become more prominent with time, giving a medicinal aspect. With time, the varnished woodiness comes to the fore. It is soft and warm, with aromas of vanilla tobacco and nuts.
The palate is dry and astringent, as the sherry cask would suggest. The camphor once again takes a good share of the aroma cake. The profile is frankly medicinal, resinous and a little roasted. The blend is quite concentrated, with intense vanilla, ripe exotic fruit and resin, followed by a hint of cereal.
The finish is quite long and greedy, with exotic fruit and cherry pit, as well as a brioche character.
"A Don Papa that surprises by its complexity, its lack of sweetness, and its profile far removed from its original version..."
