As is most often the case at Foursquare, Doorly's 8 ans is a blend of rums distilled in columns for lightness and in pot stills for complexity.
The whole is aged for 8 years in the distillery's cellars in Barbados.
Nico's tasting notes
The nose is quite light and flowery, with a simple rum typical of its English tradition. Yellow fruits like peach are joined by ripe citrus, and even a still-oily orange peel. The American oak barrel lines the background with notes of white wood and vanilla.
Aeration allows the wood to swell a little, expanding the rum's body. It then becomes a little sweeter, gilded with a spoonful of honey. It also gains in mellowness, as the oak has finished diffusing all its vanilla and coconut.
The palate is soft, with a whiff of coconut in the first moments, followed by wood that details its vanilla and white fiber. The texture is fluid, with a hint of spicy alcohol fizzing on the tongue. The toasted oak tightens the taste buds, leaving a slightly mineral impression.
The finish continues with the bitterness of toasted wood and orange peel.
