Australia has a long tradition of rum production, particularly in Queensland, where sugarcane cultivation fostered the development of historic distilleries. It is in this region that Elixir Distillers Australia 2007 is produced, selected by the independent bottler Elixir Distillers for its The Rum Trail collection.
This rum comes from the Beenleigh distillery, founded in 1884 and considered the oldest licensed rum distillery in Australia. The rum is made from molasses and undergoes double distillation , combining a column still with a copper pot still .
The maturation process takes place in two stages. The rum first spends 10 years in Australia , in American oak barrels, before moving to the United Kingdom for an additional 7 years in second-fill ex-bourbon barrels .
Through The Rum Trail, Elixir Distillers offers an exploration of sometimes little-known producing regions, selecting rums representative of their origin and production methods.
