Ferroni La Dame Jeanne 6 Maurice Repos Extrême is Maison Ferroni's oldest white rum. Guillaume is no mere bottler, as he likes to rework each of his rums at home in Aubagne. This is how this pure cane juice rum, distilled in 2013 in pot stills, benefited from a long 7-year resting period in Dame Jeanne. It's a blend of power, since it's bottled at navy strength (57%), and suppleness, thanks to this very long rest.
Nico's tasting notes
The nose is fruity and tangy, with cane juice carrying a slightly coppery, oxidized air. This then translates into an almost pastry-like quality of stone, bitter almond and raisins, lifted by a hint of cut grass.
Aeration develops the rum's coppery character, and brings us closer to the still, with a mixture of hot metal and the vapors of cane juice being distilled. The cut grass is now a little drier, and offers spicier aromas, with an occasional herbal tea note.
The palate is dry and sweet at the same time, as the vegetal side brings a certain astringency, at the same time as the cane juice glides gently over the taste buds. A certain coppery acidity agitates the mid-palate, and is joined by a handful of spices and juniper berries.
The finish offers sweet flavors of ripe cane, with accents of bitter almond and stone.
