HSE élevé sous bois is a Habitation Saint-Étienne cuvée that has spent between twelve and eighteen months in wooden tuns to become a smooth, elegant rum.

Suitable for cocktails such as ti-punch or cuba libre.

Nico's tasting notes

On the nose, the cane is fresh, so it's not immediately obvious that this is a lightly aged rum. But very quickly, very surprising notes of apple and pear appear. It's extremely fresh, reminiscent of a Domfrontais Calvados. Cinnamon, pepper and aniseed take us back to the exotic West Indies. The impression of young white rum is never far away, alternating with a spicy, slightly woody sensation. Freshness is constant, vegetal and mentholated.
Aeration removes some of this freshness, allowing the rum to gain in depth. Licorice enriches the spicy bouquet and the woodiness becomes stronger. Finally, we're pleased to have given the past fruits and fermentation notes time to settle in.

The palate is frank, with a spicy woodiness. Quite dry. The fiber of the cane comes through. The term "agricultural" is appropriate, as there's a certain rusticity. The original white rum is still fully expressed, with citrus zest adding a little extra bitterness.

The balance is long, with ripe citrus fruits closing the ball.
