JM 3 ans Épices Créoles is an agricultural rum from the "L'atelier des rhums" collection. Following on from "Fumée volcanique" and "Jardin fruité", this blend completes an olfactory and gustatory tribute to the French West Indies. Cellar master Karine Lassalle and Joseph Akhavan, founder of the Mabel bar, have designed "the spiciest old agricultural rum in the French West Indies".
This rum is primarily intended for cocktails. Bartenders will have plenty of time to discover the richness of rhum agricole vieux in all its facets.
The blend is composed of rums aged in French and American oak barrels. These new barrels have been specially toasted to release a maximum of spicy notes.
Nico's tasting notes
On the nose, the rum has a very tropical, exotic profile, full of fruit and spice. The ripe fruit largely takes precedence over the woodiness, which although present, remains in the background here. Among the layers of complexity in this rum, it is indeed the spice that dominates, with a generous, warm blend.
Aeration leads to a quiet, fresh balance, with fragrant, exotic pepper and other fruity berries. The cane is adorned with ripe fruit and dried fruit, melting into a lovely, concentrated but low-sugar jam, with added citrus zest.
The palate is lively and vegetal, with a little acidity and tannins that awaken the palate. The cane is clearly present on the mid-palate, dressed in a cloud of fine, sparkling spices, always in a fresh, luminous atmosphere.
The finish is gourmand; the cane has turned into a sugar-colored spice, like a jam.
