JM VO is an AOC Martinique aged agricultural rum. The cane used reflects the terroir of the north of the island, coming exclusively from the Habitation Bellevue area. Distilled in columns, this rum is aged for 3 years in two types of American oak barrels, each with a different toast.
Nico's tasting notes
On the nose, the oak immediately takes hold. It rolls its round shoulders, smoothly and seamlessly. As it continues to play its range, declining pepper, it is overtaken by a young agricultural rum with accents of fermented vesuvius.
Aeration again brings the wood and pepper to the fore, but a certain sweetness has settled in between. It seems that our cane has now matured, to blend into this woody landscape, like a balsam of cooked cane juice passed over oak.
On the palate, the spices take hold with a certain warmth, but without any burn. This is a chewy rum, with a range of nuts presented in a sort of gently spicy paste. The woodiness is all the more delicious, the fiber melting and oozing with cane juice.
The finish is typically agricultural, with candied cane embellished with pepper and light lime zest.
