Mater Rum Canne Jaune & Violette is an expression of pure cane juice rum from Sicily.
The young artisanal distillery Alma, founded in 2021, produces a rum from pure cane juice from local agriculture. The canes are harvested by hand between March and June.
This expression is the result of the assembly of yellow and purple cane varieties. The cane juice is fermented with wild yeasts for 72 to 96 hours.
This is followed by distillation in a copper pot still heated in a bain-marie, then resting in a stainless steel tank.
The entire process is internal to the distillery, from cane cultivation to bottling. This limited edition has only been produced in 1000 copies for 2024.
