This Montebello rum has aged for 6 years in oak barrels. It was then reduced to 42° and bottled.
Nico's tasting notes
This surprising rum charms the nose from the very first moment. It has both a pastry and a waxed-wood character. This brilliant amber resin nose is composed of wood essences, candied fruits and a subtle green olive in brine that energizes and energizes the whole. It's a full-bodied rum, almost Jamaican in character. Very ripe exotic fruit adds body and life, while a hint of smokiness and toastiness adds diversity to the thick, tropical ambience.
On aeration, candied fruit takes over. At this point, one thinks of those highly perfumed rums we call "cake rums". That might be reductive or pejorative, if this rum were limited to that, but it's much more elegant than that. It's definitely fruity, candied like a paste of periwinkles, prunes and ginger. Again, a toasted bun in the corner, followed by dried fruit (raisins, figs), just in case anyone still doubted that this was a good gourmet rum.
The attack on the palate is just as full and surprisingly salty. The cane makes a clear appearance before the thickness and greediness of candied fruit take over. Aromatically powerful, this Guadeloupe rum is still reminiscent of its Jamaican cousins and their big bursts of very (over)ripe fruit. The pineapple, papaya and mango that fall from the tree struggle to conceal a touch of fresh leather that brings a welcome balance. Still in a candied but spicier register, currants and licorice continue to balance the rum, giving it a sharper edge. The salty sensation spreads along the sides of the tongue. Gourmandise...
The rum remains tasty throughout, with a hint of the agricultural side and cane. Finally, currants, licorice and a dark, salty caramel never want to leave the taste buds.
"This rum lives up to the standards we've come to expect, deliciously gourmand but crafted and elegant, it's more than a cliché. More like a yardstick...?"

Pleasantly surprised by the smell, I don't know if it's from my new glass, but I've got a wonderful sense of smell,
On the palate, it's raw on the first sip, like an old plank of dry wood. But in the end, it leaves us with a good taste of fresh fruit, an impression of exotic fruit salad.
