Naga Pearl of Djakarta is a rum fromIndonesia, and more specifically from theisland of Java. This island is the cradle of sugarcane, and also of batavia arrack, an ancestral brandy made from sugarcane molasses.

This rum is unique in that it benefits from a unique fermentation process, stimulated by red rice yeasts. It is a blend of pot-still and column distillates. Aging takes place in 3 different types of cask: Jati and ex-bourbon(American oak) for 7 years, then 12 months in cherrywood casks. This last stage adds spice and tannin to the rum.

Nico's tasting notes

The first nose is caramelized and sweet, like a crème brûlée or barley sugar. A hint of dried plum begins the fruity side, soon confirmed by round grenadine and mirabelle plum jam.

Aeration brings a slight smokiness, accompanied by a few notes that might be described as metallic. This gives the rum an interesting industrial air. Especially when this smokiness begins to take the form of roasted, caramelized pecans.

The palate is soft and sweet. This counterbalances a texture that could have been much harsher, with aromas of burnt wood, coal and copper. Once again, this industrial register changes to nougatine or roasted nuts.

The finish leaves a hint of walnuts still adorned with their husk, followed by a hint of red and black fruit jam.
