Nine Leaves Almost Spring Cabernet Sauvignon is a Japanese rum made from Muscovado brown sugar (called Kokuto in Japan), a pure, unrefined cane sugar. It is produced by a traditional micro-distillery, founded in 2013 by Yoshiharu Takeuchi in the town of Otsu, near Tokyo.
Inspired by the techniques used to make single malts, this rum is distilled twice, in two different pot stills from Scotland. It is then aged for a year in ex-Cabernet Sauvignon wine casks from California's Wente vineyard. These casks have benefited from the strong climatic variations of the mountains of Shiga prefecture.
