Oaks & Âmes Hors d'Âge is an aged rum produced by the Oxenham distillery on Mauritius .
It is made from pure cane juice , then aged for a minimum of 10 years in different casks: new French and American oak casks, ex- sweet wine casks, ex-bourbon and ex-cognac casks .
The initial juice comes from yellow and red canes, which have benefited from a long fermentation (8 to 14 days) at low temperature (18 to 20°C).
