The nose opens with a lovely, full-bodied cane. This cane has a lively, rustic character, with notes of fermentation that draw towards the vegetable family, and even cabbage. One could speak of a rather farmy, vegetal side. It's quite a powerful nose, then, with a clear honey that radiates and carries off the aromas. The rum is rather strong, with alcohol and pepper penetrating the nose if you linger long enough.
With aeration, the rum releases its solvent side, sometimes reminiscent of new paper. The cane then comes clearly into view, and has a lot to say. Its vegetal side becomes more fragrant, less rustic, more sophisticated. We have bergamot, licorice stick, spices, tea... Here's a white that takes us elsewhere, away from clichés. The cane remains lively and frank, with striking notes of tropical flowers and humus. Pepper is always there to wrinkle the nose.

On the palate, the attack is just as frank and clean. The cane takes center stage, imposing itself with its slightly acidic fermentation notes. This cane is simple and natural, expressing its terroir by letting its fiber speak for itself, then descending to the earth. The pepper is always there, from the flower to the roots.

The finish sums up the whole tasting experience, simple and authentic. It extends the aromas of fermentation, pepper and bagasse.
