Papa's Pilar Rye Finished is an aged rum blended like Flagship Dark : it is made using the solera method in a selection of bourbon, port and sherry casks.
This vintage benefits from a final refinement in American rye whiskey barrels.
Jérémie's tasting notes
On the nose : toasted cereals mingle with cooked brown sugar, creating a very pastry-like profile, with notes of roasted nuts, almond, and honey.
On the palate : the attack is round, almost licorice-like, releasing a melted caramel accompanied by cocoa and a slight bitterness. Oxidized red fruits quickly emerge, the caramel becoming increasingly creamy, evolving towards mocha with some candied fruit alongside. Sweet spices sprinkle the whole.
The finale : On the pastry notes which are counterbalanced by the lingering bitterness.
