Maison Ferroni is careful to use only fresh plants grown without pesticides and wild plants in its recipes.
Fennel, verbena, lemongrass, thyme, rosemary, licorice and aniseed add freshness to this exceptional handcrafted pastis.
After production, the pastis is aged in oak tuns for over a year.
Nico's tasting notes
The nose is very fresh and licorice-like, very powerful from an aromatic point of view. It's thick and sweet, but the spices, like star anise, have a very natural, almost woody air, so that their very nature, not just their aromas, is clearly discernible.
Aeration brings out a more vegetal, slightly medicinal side, as well as a mellowness that seems to come from a handful of tender almonds. A little beeswax now covers the whole, and the spices take on an increasingly pastry-like air.
On the palate, licorice and star anise attack hard, but with a well-rounded feel. Concentration is the watchword, as spices and herbs invade and leave their mark on the palate. With a little water, the vegetal takes over, with heather plants (or should we say garrigue!). Anise and fennel prevail over licorice, and freshness develops.
On the finish, the pastis is as concentrated, aromatic and flavorful as ever. It doesn't want to leave your taste buds, delighting you for many minutes.
