Ron Viejo de Caldas Carta de Ojo is an 8-year-old molasses rum from Colombia. It is produced by Industria Licorera de Caldas, whose expertise dates back to 1928.
Aging takes place at an altitude of over 2,200 metres, in the heart of the Andes mountain range. The casks are made of white oak from local forests.
Yoann's tasting notes
The nose of this rum is rather sweet and comforting. It makes you want to go back several times. The vanilla is accompanied by a creamy caramel. A few nuts are present and sprinkled with a black pepper with a subtle and elegant scent that tickles the nostrils. With a little aeration, you can detect some spicy notes.
The taste is like a great treat. It is not a rum that we are tasting, but a piece of vanilla flan topped with creamy caramel. Macadamia nut pieces enhance this dessert. The palate is round and rich.
Over time, more fruity notes appear, with peach then orange peel soaked in forest honey.
The finish , rather pleasant, keeps the structure of the mouth on orange peel and honey before fading.
