Rum Of Mystery Australia 7 years old 2014 is a molasses rum from Queensland, Australia. It comes to us from the Beenleigh distillery, the oldest in the country, which carries the No. 1 distilling license. It comes from the Rum of the world collection, initiated by La Maison & Velier.
Distilled in pot stills and columns, it was aged for 5 years in bourbon casks in a tropical climate. It was then matured for a further 2 years in cognac casks in Europe.
Nico's tasting notes
On the nose, there's a greedy acidity of red fruit that's both fresh and sweet, like grenadine lengthened by redcurrant or cranberry juice. Freshness is also expressed through a slightly vegetal, finely spiced aspect.
Aeration brings out other orchard fruits, which easily blend with the freshness of the first nose. Pear and apple give a delicate, sweet juice with a hint of citrus.
On the palate, the rum is a little spicier and lighter than it appeared on the nose. A small coppery texture first grabs the taste buds, then red fruit stones cling to the palate, delivering thick black berry tannins.
The finish lingers for quite a while, thanks to a slight bitterness of citrus zest that gives this rum a little agricultural air in the length.
