Nico's tasting notes
The nose is bathed in fruity sunshine, bursting with tropical aromas. Bananas come to mind in all their forms (green, ripe, cooked, flambéed...), as do jackfruit and very ripe mango. Spices are not to be outdone, their sweetness creating a pastry profile of the most gourmet kind.
Aeration slips a little plant milk under our noses, with notes of almond, menthol, a little pine sap and yeast. The latter then gives a brioche-like, pastry-like sensation, superbly balanced by herbs and fruit.
On the palate, the rum doesn't fall into the trap of being too round or too creamy. The aromas of fermentation give the floor back to molasses, with a hint of licorice that develops a fresh, slightly resinous aroma. This calls for stone fruits, notably cherry, followed by exotic fruits such as banana, which we find again with great pleasure.
The finish is greedy and oily, with raisins and kernels that are intensely pastry-like and slightly spicy.
