Saint James cuvée 1765 is the result of a subtle blend of different rums. The rums are aged for 6 years in small oak barrels in the Saint James cellars, where they are AOC-certified. The name of this cuvée is a tribute to the year Saint James plantations were founded.

Nico's tasting notes

Summary: woody - dried fruit - toasted bread - sweet - mellow tannins

The nose is very woody and thickened by an undergrowth atmosphere. The dried fruits have retained their mellowness. Fresh dried apricots come to mind, as do dates and figs. Nuts and woody tannins meld and intertwine in an intoxicating, spicy dance. The fine grain of wood and spice is elegant and racy, like opening a cigar box. Once again, the dried fruits are soft and puffy, with papaya, mango and candied red fruit. All these aromas are blended and integrated, so that the woodiness seems to give way to the fruitiness and vice versa.
Aeration delivers more roasted notes of nuts and toast. We have all kinds of bread: cereal, wholemeal, even rye. The wood refines again, with peppery tannins and drier fruit. And then it links up again with fruit, more exotic and ripe this time, but also with the cane that brings invigorating citrus. The nuts have succumbed to all this exoticism, and are less roasted and fatter.

The palate is very smooth, mellow, tasty and full-bodied. It is above all fruity and almost sweet, like a blend of dried exotic fruits. The wood and its tannins burn and radiate in a nourishing way, releasing a little intense menthol, as well as other herbs that lead to something peppery. The wood is where it all starts, the conductor of this mouthful.

The finish is quite long, the pepper tasty, preparing the palate for the beautiful assortment of carefully selected nuts that will accompany us for a while.
