A harmonious composition of vintages aged between 4 and 5 years, Saint-James Fleur de Canne Vieux is a rum with a gourmet character.
Produced in a limited edition, it has been preserved from harsh tannins thanks to the use of used barrels. It thus rediscovers the freshness of sugar cane.

In short: fruit – wood – roasting – dry – sweet spices
The typically agricultural nose oscillates between dried fruits and a heavy, deep woody note. This young, aged wine has already drawn the essence of what the barrel could offer. Its youth and freshness allow it to retain aromas of very fresh fruits, in a freshly prepared salad: pears, bananas, grapes, oranges that will gradually bring to mind fruits in syrup, before returning to dried fruits.
With aeration, the nose tightens to something finer and more acidic, allowing us to explore even more the register of fresh fruits like white grapes and currants. Then, when the rum settles again, it swells with dried fruits and wood tannins melted with sweet spices.
The palate is initially marked by toasted wood and coffee, then quickly by exotic fruits and dried fruits, with a little stimulating acidity. The tannins melt widely and bind with the dried apricot for a very tasty mid-palate, then the very fatty nuts settle in the background. This woodiness does not leave us, whether it expresses its roasted walnuts and hazelnuts or when it enhances the mangoes and dried apricots.
The finish leaves a lasting impression, with the elegance of the cherry and its stone, and always these melted tannins which flood the mouth.
