Taragawa White is a rum produced in Japan's Okinawa archipelago, on Miyakojima Island to be precise.
The Taragawa distillery is renowned for its production of sake and awamori. It is located in a region where the climate is ideal for growing sugar cane. That's why today the distillery is surrounded by cane fields, enabling it to also produce rum from molasses from its own estate.
Rum is produced by double distillation in a hybrid still. The first distillation is carried out under vacuum and the second under more conventional conditions.
Vacuum distillation enables a finer selection of the distillates you wish to preserve. It is also more technical, which makes it a less common type of distillation for spirits.
