Here is a cachaça that has been aged for 2 years , one in an American oak barrel and one in a cabriúva barrel (Brazilian wood).

This double maturation process gives it a rich aromatic profile.

Jérémie's tasting notes

On the palate: a clean, sweet, round attack with a touch of acidity, vanilla, acacia honey, pear, and peach, accompanied by balsamic notes, rosemary, and a hint of pepper and nutmeg. The oak is present but subtle, providing structure that gives a silky texture and quite characteristic aromatic notes.

The finish: quite long, with sweet and tangy notes and mild spices.

On the nose: a beautiful aromatic expression blending vanilla, floral notes of jasmine and white flowers, reminiscent of acacia, as well as a sweet and fruity softness, enhanced by a delicate touch of pear.

On the palate: the attack is direct, with a lovely roundness and a luscious sweetness, balanced by a touch of acidity. Aromas of vanilla, acacia honey, pear, and peach mingle harmoniously with balsamic notes of rosemary, accompanied by a hint of pepper and nutmeg. The oak, present with great finesse, provides structure, a silky texture, and a distinctive aromatic signature.

The finish: long and persistent, it prolongs the sweet, slightly acidic notes, before ending with sweet spices.
