For this, the duo of friends selected a barrel of rum from the Fiji Islands. Distilled in 2015, this molasses rum benefited from full aging in ex-bourbon American oak barrels. This was followed by a long reduction process drop by drop. This long and meticulous process ensures that the rum is not denatured when adding water.
Yoann's tasting notes
The nose of this rum offers intense and gourmet aromas of vanilla and caramel. A pastry register therefore settles into the tasting. Notes of almonds and butter suggest a tart base fresh out of the oven.
On the palate , the texture is fatty, almost oily. A little acidic side disrupts this sensation of smoothness. The aging in bourbon barrels is very present with notes of vanilla and caramel in the lead. Then come stewed fruits like quince. The acidity remains present in the background with citrus zest.
Aeration develops notes of coconut and almonds for added indulgence.
The finish is very interesting and leaves a lasting impression on the palate with caramelized coconut.
