Joël Moysan's factory is located in Capesterre De Marie-Galante. It produces a traditional battery syrup, a cane juice evaporated in the manner of 18th-century sugar mills.

The battery is an old sugar mill term, referring to the last boiler used by the cane juice to make sugar. To make Moysan "siwo batterie", sugarcane juice is cooked for a long time over a wood fire. As it begins to boil, the impurities and scum that rise to the surface are removed. It clears and evaporates as the process continues, taking the form of our thick, dark syrup. We know it's properly cooked when it reaches its characteristic brown color, elasticity and licorice aroma. It is then left to cool to room temperature before bottling.

Mr Moysan uses all that sugar cane has to offer, and also transforms bagasse into fuel pellets.

Battery syrup is a staple of West Indian gastronomy. It is used in pastries and cooking, and is an excellent partner for rhum agricole in ti'punch. Read less
