This sweet potato shochu ("Beni-Imo") comes from the Yamatozakura distillery, located on volcanic land by the sea. This distillery is located in the heart of the sweet potato production zone in Kagoshima prefecture.
The rice Koji (the basis for fermentation in century-old jars) is prepared by hand. It is then supplemented with sweet potatoes.
A single distillation in a pot still is enough to produce this eau-de-vie.
Before bottling in 2022, it is matured for 4 years in enamelled vats.
