Bally 2000 is an AOC Martinique vintage agricultural rum. It is produced by the Saint-James distillery to very precise specifications.

Distilled in a traditional Creole column, this rum is aged for several years in oak barrels. Part of the production is still aged in the cellars of the original distillery, founded in 1923 by Jacques Bally.

Nico's tasting notes

On the nose, this Bally is both fresh and woody, with cane juice still very much alive and vegetal, albeit ripe and well weathered. On the other hand, the lightly toasted oak stretches its tannins in length, showing an almost mellow fiber in the process.

With aeration, the nose becomes denser and thicker, without losing its mellowness. Nuts develop the most, to the point of evoking a fatty paste of peanuts and hazelnuts.

On the palate, it's once again the cane that shows itself first, and we're delighted to see that this beautiful material has not been swallowed up by time and oak. Naturally, the wood adds a few spices and elegant cigar-box nuances, but the tannins never spoil the party.

The finish, too, is devoted to cane juice, with even the slightest hint of citrus peel, which lingers well into the finish.
